Falerno del Massico DOC
From the Roman Empire, Falernian was the nectar of the gods — poured into the gold cups of the patricians and praised in the verses of Martial and the pages of Pliny the Elder. The hill country of Carinola has always stood out for its elite winemaking.
Two thousand years on, the Casale vineyards still produce a structured, austere yet fragrant, velvety wine. Drinking Falerno in Casale means tasting a liquid memory — a pure extract of the geological history of the Roccamonfina.
Volcanic orchards
Cherries, chestnuts, citrus, hazelnuts
The tephritic soil, loaded with potassium and rare minerals from the Roccamonfina, yields produce of the highest order. Cherries matter so much that the main avenue is named after them — Viale dei Ciliegi (Cherry Tree Avenue). Old chestnut groves, citrus orchards and hazelnut woods round off a farming cycle that follows the rhythm of the seasons and keeps every ingredient strictly local.
Easter Sunday
The 101-egg frittata
For the forty days of Lent, eating eggs is forbidden. The hens, of course, keep laying. The women of the house save them up: on Easter Sunday the prohibition lifts and the surplus erupts into a single monumental dish.
The number 101 is not an exaggeration: it is a mathematical symbol of abundance, an auspicious odd number that breaks decisively with the rigour of Lent. A victory of life over winter penance.
Cooking happens in the sartania, a huge hand-beaten copper pan with a long wooden handle. In Casale it is not just a tool: it is a piece of social standing, often passed down from mother to daughter as part of the dowry. Flipping a frittata of dozens of kilos in mid-air without breaking it is physically impossible alone — the preparation becomes a choral act, a ritual of family and neighbourhood cohesion.
